Omelette Breakfast Bowls

Omelette Breakfast Bowls are one of my favourite ways to start the day (after coffee, of course). They aren’t too difficult to make, are fairly healthy and way more exciting than your standard omelette.

If you have never had these before, I thought I would share with you the steps to make this delicious breakfast!

  • Eggs

  • Sliced Ham

  • A Muffin Tray

  • Your Choice of Veggies (I chose peppers, spinach and onion)

  • *Optional* Cheese to melt on top

omelette breakfast bowls 1Preheat the oven to 300 degrees celsius.

Next, crack the eggs into a bowl (one egg for each omelette bowl), scramble and add the vegetables.

You can pretty much add any vegetables you have! Spinach, red pepper and onion is my favourite combination.

Add salt and pepper if desired.

Poor the mixture into the ham cups as best as possible. If you have a non-stick muffin tray, don’t worry about greasing it beforehand.

Add the shredded cheese on top: I used marble!

Take the omelette breakfast bowls out of the oven when the cheese is melted, the eggs appear cooked-through and the ham is slightly crispy. For me, this was 15-20 minutes.omelette breakfast bowls 4omelette breakfast bowls 5

These are delicious! I usually make more than I am going to eat so I can have some the next morning as well! If you are having company over, you can make a whole muffin tray full or even two and I am sure they will be a hit!
